Grease Trap Pumping
Pumping is the removal step in grease trap service. A vacuum truck pulls out the grease mat, the gray water underneath and the solids on the floor of the unit, then carries the load to a facility permitted to receive it.

Once the lid is off, the technician breaks up the grease mat so it flows, then works the suction hose through each chamber, including the corners where food solids pack in. The contents go straight into the truck's sealed tank, so nothing is carried through the kitchen in buckets.
Under-sink units can often be reached with a short hose run from the curb or alley. In-ground units need the truck parked close to the access cover.
- Grease mat broken up before suction
- Each chamber drawn down to the floor
- Contents sealed in the truck tank
- Manifest signed before the truck leaves
Prefer service after closing? Overnight crews are standard.

Grease waste is regulated, so each load moves under a manifest that records where it came from, how much was removed, who hauled it and where it was delivered. Your signed copy is the record a FOG inspector will ask to see, so keep it with your maintenance log.

Call (424) 573-8021Setting a pumping interval
A common benchmark is to pump before grease and solids take up a quarter of the unit's liquid depth, and many local programs also set a maximum time between visits. A burger and fryer kitchen can hit that point in a few weeks, while a sandwich counter may go much longer. Measured depths over two or three visits give you a reliable interval.
Unsure how big your interceptor is? A technician can talk it through.
